Chefs au Sommet d’Auron welcomed at the Table du Chalet chef Nicolas Vie and pastry chef Julien Pambour from the Moulin de Vernègues in Mallemort.

From January 20th to 26th, 2018, Les Chefs au Sommet d’Auron – 7th edition – offered memorable gastronomic experiences at a unique and privileged price. Every evening, the renowned chefs officiate in the restaurants of the resort and Haute Tinée and offer tourists and local some sumptuous gourmet dinners prepared by exceptional chefs, at the price of 45 € per person. The pair Nicolas Vie and Julien Pambour from Le Moulin de Vernègues in Mallemort delighted the taste buds of fins gastronomes at La Table du Chalet d’Auron.

Culinary pleasures at the foot of the slopes

For seven years, the Festival of Mountain Gastronomy has been bringing together many talented chefs and pastry chefs from the Côte d’Azur who share an authentic moment of culinary pleasures and conviviality in the heart of the sumptuous Mercantour mountains.
On Sunday, January 21, 2018, the 4-star chalet-hotel Le Chalet d’Auron hosted in the kitchen of its Restaurant La Table du Chalet the chef Nicolas Vie, chef of Moulin de Vernègues in Mallemort and his pastry chef Julien Pambour, who deliciously delighted the guests’ taste buds in the intimate, woody and warm decor of the restaurant that was full for this exceptional dinner.

Flakes and flasks

Dinner guests were had the nice surprise to discover the thousand and one talents of Victor Delpierre, Barista/Cocktails World Champion, who is mixing and shaking as an artist to make his delicious colored cocktails mixed to suit everyone’s tastes. At the aperitif, Victor Delpierre has welcomed the guests with a White Lady, a fresh, fruity and tangy cocktail based on Gin Méridor, who won the International Wines & Spirits Competition Gold Medal in 2017.
Two cocktails, some original creations, accompanied the dessert, to choose: the Orangette, the famous gourmandise in cocktail version or, the Candies, a cocktail with flavors of acidulous candy.

Alliance of sun, earth and sea

Nicolas Vie and Julien Pambour composed an elegant and refined menu, with alliances of sun-drenched flavors from land and sea, which unanimously delighted the gourmets of this gastronomic dinner of Chefs au Sommet d’Auron.

Cappuccino de Butternut au Jambon de pays

As an amuse-bouche: Butternut Cappuccino with Country Ham and Roasted Hazelnuts. A creamy butternut velouté subtly enhanced by the aromatic brilliance of the country ham, on which the hazelnuts crisp pleasantly in the mouth.

Foie gras de Canard

The starter: Duck Foie Gras cooked in low temperature, Fennel & Apples Chutney and Chestnut Bread. A sumptuous foie gras presented on slate, in an artistic and flowery decoration. The chutney brought its notes of freshness to the frank and authentic flavors of the bread and salt of Guérande.

Médaillon de Lotte et Gambas snackés

Main course: Medallion of Lotte and Gambas snackés, Vegetable risotto with old Parmesan cheese and Spray of Chorizo. Fineness of monkfish flesh, perfumed, firm but melting for an iodized duet from the sea, on an island of vegetal risotto, languorously bathed in a creamy sauce.

Macaron Combawa et Crémeux Passion & ses cocktails

Dessert: Macaroon Combawa and Creamy Passion, Faisselle Ice Cream. A delicious round-trip of sweets: the macaroon in the combawa takes us to distant exotic lands and the smoothness of the faisselle ice cream brings us back to our snow-capped mountains.
