Chocolate Final at Agecotel

final chocolat agecotel 2016Agecotel 2016 introduced the first Trophée Cacao Criollo which takes its name from the rarest varieties of chocolate among the three existing in the world.

At Agecotel, the competition, reserved only for professional chocolatiers with at least three years of experience, was chaired by renowned chocolatier Pascal Lac from Nice, creator of the contest. On the theme of Valentine’s Day, the Trophée Cacao Criollo (Trophy Criollo Cacao) has nominated six young chocolatiers selected on file, to make a gourmand coffee and a piece of chocolate after their inspiration.

An all chocolate achievement

The aim of the competition is to enable young people to demonstrate their skills on making an “elegant” café gourmand consisting of three mignardises (delicacies): a coffee pastry, an all chocolate pastry and a biscuit. Their talent was also to be expressed around a piece in chocolate of their creation on the theme of Valentine’s Day.
The winners: Cédric Servella from Hotel Negresco in Nice, had the delightful surprise to climb upon the top step of the podium, followed by Clément Cornet from Chocolaterie L’Oiseau d’Or in Cagnes sur Mer and Jimmy Matyasi, La Pâtisserie Matyasi in Toulon.

Gluten-free afternoon

Martine Deloupy, specializing in reconciliation between gastronomy and health,was given Carte Blanche on February 3 for an afternoon devoted to gluten-free and food intolerances. To talk about these new food trends, Martine was surrounded by many professionals, including the Bio-nutritionist and lecturer Marion Kaplan and Reine and Nadia Samut, Olivier Bœuf, Franck Valot or the society Pain-Petit Four.

Carte Blanche to chefs

For the duration of this 27th edition, the Espace Chefs was a friendly place for visitors, guests, journalists and personalities from the culinary world and the hotel industry. Each day, it served as superb amphitheater for chefs and female chefs who were given Carte Blanche allowing them to achieve personal recipes or invite personalities of their choice around a table d’hôtes.
Carte blanche was thus given on January 31 to Joel Garault (Le Vistamar in Monaco, 1 Michelin star), Hermance Caro (Le Castellaras in Fayence, 1 Michelin star), Nicole Ruby (La Petite Maison, Nice) and Philippe Joannès, chef of Hotel Fairmont in Monte Carlo. The prestigious chefs showed off their delicious specialties with many visiting professionals and personalities.

Valérie Rousselle – La Vie En Rose & son

New wine cuvées

On the stand of Château Roubine, Valérie Rousselle had left her Var Provence to present La Vie en Rose, her new pink and slightly bubbly vintage. A novelty also at Château Reillanne and its Prose bottle: a Côte de Provence labeled with the famous blue chair from the Promenade des Anglais, personally submitted by the artist behind this work of art signed SAB.

The 27th edition of Agecotel, the Grand South trade show for hotel and restauration sector in Nice, closed its doors after four days of gustative madness and star-filled eyes. A beautiful highlighting for the 165 exhibitors who were demonstrating that the French Riviera expertise was always on top. Enough to persuade 12,000 professionals looking for novelties and ever more demanding in terms of quality.
