The 5-star Five Seas Hotel Cannes invited on September 2, 2016, its customers to discover and taste the good products from Provence in the spotlight on the menu of the restaurant Le Sea Sens By Arnaud Tabarec. Today, one thing is clear when it comes to gastronomy: consumers have become more demanding and quality products are increasingly hard to find. The “consum’actors” are now demanding taste and authenticity and the Five Seas and Arnaud Tabarec, engaged in a qualitative approach, are offering hotel guests the best of gastronomy.
The passion of tasty
Good products from Provence are increasingly hard to find. Yet, there are still some small local producers, with an attachment to the land and their country, who sow, plant, cultivate with year-round passion, pick and pluck their ripe beautiful fruits and vegetables to offer quality, environmentally sound, products all fresh and especially tasty!
With the same requirement, some breeders raise with passion their cattle, sheep, poultry. They select the most appropriate breeds and raise the best animals to deliver high quality, healthy and tasty meat, or produce milk to achieve the best cheeses.

On the fifth floor of the 5-star Five Seas Hotel Cannes is the gastronomic restaurant Le Sea Sens. The menu is signed by chef Arnaud Tabarec. This chef of exception has the culture of good product since childhood and constantly crosses our beautiful country in search of the best producers, farmers and processors. The maestro of the kitchen had at heart to highlight these hidden treasures of our terroir, unearthed during its gourmet getaways.
During the evening of sharing with culinary partners, the gests were able to discover and taste the delicious smoked salmon Borvo (Maison Borvo in Chevilly sur Marne), recognized worldwide for the quality of its fumigation and unique craftsmanship. To enjoy also, three delicious Taramas: with saffron, trout eggs and crab.
The Cochons de la Côte d’Azur, raised at 800 meters in the heart of Parc Naturel Régional des Préalpes d’Azur in Saint Vallier de Thiey, produce the best handmade sausages, rillettes and pâté in the region.
The Ferme du Puntoun was also present with its superb duck foie gras mi-cuit from the Gers.
Tastings of fresh dishes
The Pêcherie Azuréenne has elaborating in tasting a Tartar of Bar with Shallots, Olive Oil, Ginger, Lemon and Mango Cream. The pastry chef of the Sea Sens, Amelia Thomas, had made for the occasion a wonderful dessert: Swiss Meringue filled with Pastry Cream with Yuzu. These delicious preparations were accompanied by the wines from the Château Malherbe, a vineyard located in Bormes les Mimosas. For the green touch, the company Sodial presented its fragrant vegetable dishes as well as its fine meats.
A hotel with the discreet charm
The Five Seas Hotel Cannes offers from the 5th floor breathtaking views of the city skyline, the harbor and the Suquet, the historic center. Adjacent to the terrace is a bar area and also a lively brasserie inspired by the very inspired chef Arnaud Tabarec, chef of Le Sea Sens gastronomic restaurant, considered as one of the best in Cannes.
This affable, dynamic and creative Bourguignon, defines himself as a director of market product and perfectly masters the low temperature cooking.
This exceptional chef optimized his talent in the most beautiful and prestigious houses of France. First at Jacques Lameloise in Chagny (Relais & Châteaux three stars), before continuing his career at Templiers in Bézards (Relais & Châteaux 1 star), Le Vieux Puits in Fonjoncouse (three stars), La Galupe in Urt (Relais & Châteaux, two Michelin stars), Drouant alongside Antoine Westermann, and in Singapore with atypical Emmanuel Stroobant.
He was awarded a Michelin star in 2014 and 2015 and became a TV star as formidable chef of the Hell’s Kitchen cooking show on NT1.
