The International Club Les Toques Blanches brought together on March 4, 2016, azureans producers and chefs at Chateau de Saint Martin for a gastronomic day and a giant aioli.
The International Club Les Toques Blanches, led by the cheerful banter of chef Pierrick Thomas, has organized the second edition of the Journées de Rencontres Gastronomiques at the Countess Adeline de Barry, owner of Château de Saint Martin in Taradeau in le Var. In this unique place in Provence, a former Templar Commandery of the 12th century, the day was placed under the sign of sharing, friendship and beautiful encounters around the gastronomy of the French Riviera terroir.
Delicious preparations with the lovely Mediterranean aroma
In the morning, many stands of producers and growers from le Var and Alpes-Maritimes have invaded the gardens of the Château Saint Martin. In a hectic and joyful atmosphere, each were striving to uncover a wide range of products Riviera terroir for professionals from the world of gastronomy. Thus, alongside, were the delicious breads artisanal by Pains-Petitfour, based in Saint Andre de la Roche near Nice, chips by the house Socca Chips, organic tomatoes, peppers, eggplants, radishes… or the delicious macaroons from Bruno Lafargue‘s MicMac Macarons.
Among the guests, the Var chef Gui Gueda, Pope of Provençal cuisine and Stéphane Raimbault, chef of L’Oasis in Mandelieu-La-Napoule. Both came in neighbors to share the simple moments of people passionate by earth and French cuisine. The opportunity also to taste some delicious preparations like with the lovely Mediterranean aroma like cheeses from Provence, honeys from high Var lands, chestnuts, olive oil, truffles, mushrooms, snails, ostrich meat.
All these delicious products soon will appear on the gastronomic menu of prestigious establishments.
Gourmand lunch around an Aioli
This gourmet day was also hosting numerous culinary workshops around the nougat, ostrich or risotto. The chef Jean-Louis Rizzo and his team, all members of the International Club Les Toques Blanches, concocted a delicious lunch around an Aioli, served in the reception hall of the Château de Saint-Martin. As a starter, a delicious Provencal Caillette façon Jacques Vignal, a small salad and “maisons” variants, followed by a Provençal Aioli with Fresh Cod, and to finish off, a black Creamy Chocolate with Raspberry heart.
This true delight for the taste buds reflected the gastronomic heritage that the whole world envies us. The dishes were accompanied by delicious wines from the vineyards of Château Saint Martin: a Cru Classé Grande Réserve Rouge and a Rosé IGP 2015.
The afternoon was devoted to tableware: earthenware, pottery, glassware, table decoration and cellar tours and wine tastings.
The International Club Les Toques Blanches
Created in 1980 by Jean Rougié, the International Club Les Toques Blanches aims to bring together worldwide professionals of quality Restauration and l’Hôtellerie: cooks, chefs, pastry chefs, caterers, sommeliers. The France section was born at the initiative of Maurice Brazier, chef of Méridien Porte Maillot, with the support of Paul Bocuse and Joël Robuchon. The association now has 340 members and 8 regional delegations. The International Club Les Toques Blanches aims to defend the quality and compliance of the products and the various culinary traditions. The association also aims to maintain the culinary expertise of chefs by establishing links of friendship and professional cooperation, promoting good cuisine through training and transmission, in France and abroad. The association organizes various events each year (trophies, workshops, culinary events…) for which many prestigious chefs are solicited.
About Château de Saint Martin
Nestled in Taradeau, in the heart of the French Riviera, in a beautiful natural setting, the Château de Saint Martin wineyard boasts a unique history and architectural heritage: relics show a Roman presence from the second century BC to the seventh century AD and a long tradition of grapes cultivation. The estate was the wine Priory of the Moines de Lérins from the tenth to the eighteenth century. The château has a gorgeous park with 200 different plant species.
