The Restaurant Le Blanc Manger in La Colle Sur Loup is a calm oasis of moments of culinary happiness orchestrated by Chef Brigitte Guignery.
At La Colle Sur Loup, halfway between the coast and the village of Art of Saint Paul de Vence, Le Blanc Manger is a rare pearl of generous, refined and creative, but very affordable, “à l’ardoise” gastronomy.
The name of the restaurant, a sweet dessert made from flavored milk, already evokes la bonne chère and la douceur de vivre. When she bought, twelve years ago, Brigitte Guignery kept the former name of the restaurant, probably in memory of the many years spent creating pastries at L’Auberge du Jarrier – 1 Michelin star – she managed with her husband in Biot, before focusing on her true passion: cooking.
The Lady is the Chef
Brigitte Guignery, one of the few lady Chef in the French Riviera, is also one of the most talented. She shares her passion of a cuisine “after her own heart and desires”, always looking for new products and new culinary creations, and devote herself to offering “moments of happiness” to her customers. Brigitte stands for exclusively fresh and seasonal products from our terroir; everything is “homemade” and patiently elaborated in her kitchen. The chef then takes pleasure in arranging nice-looking plates. Passionate about wine, she combines her with dishes discovery nectars, unearthed during the winter at sometimes little-known producers.
Greenery, calm and old stones
Greeted by Brigitte Guignery’s warm smile, the customers find an air-conditioned room for summer, opening out on a terrace surrounded by greenery for sunny days. The “wellness” decoration without ostentation is in the colors of Provence, white, ocher and old “mas” old stones with exposed beams. The dining rooms are furnished with wooden tables with lovely wickerwork chairs. Another room, furnished with deep leather armchairs with a fireplace, evokes a cozy atmosphere and winter by fireside enjoying an invigorating dish or a Lounge Bar to sip in the evening a good glass of wine accompanied by a plate of homemade tapas. Le Blanc Manger is a quiet oasis where you feel immediately at home, ready to discover and let your plate enjoy.
A bistro and gourmet cuisine
The menu includes a delicious very refreshing Seabream Tartare with condiments, dotted with Granada seeds and wasabi beads, surrounded by frost tomatoes gelée. A Zucchini flower sealed as fritter brings crisp Provençal note. As “salade gourmande”, Brigitte Guignery offers a superb salad of crunchy Vegetables, Baby Pigeon fillet with thighs confit at low cooking temperature, Pigeon juice and onions fritters – always for the crisp note – or a Prawns salad “façon Caesar”, Parmesan, golden Croutons, crispy Pancetta and Coral sauce with grapefruit segments providing a flavored freshness. The flavors are well-marked and defined, with an ingredient that stands out while sublimating the others. The great Art.
The sea lovers will be pleased to enjoy an extraordinary roasted Mullet Barbet fillets, Lemon Olive oil, Fava beans, black Olives and semi-confit tomatoes: an explosion of Provence tastes! With as vegetables: Artichokes and crispy Zucchini flower fritters.
A fine festival of flavors with a savory combination of land and sea: the Tuna steak, Daube ravioli, casserole, Mushrooms cream and white truffle condiment and crispy roasted pine nuts! One can also prefer a a real delight of creativity with the Bass fillet, Gnocchi with basil, Barigoule of vegetables, Artichokes juice with Coriander and Lemon confit.
Again, the cookings are perfect, the tastes are well-defined – we know what we eat and the savors can be clearly distinguished in the harmony of flavors. And the sauces … Ah! You should know that Brigitte has acquired a training as “saucière” at L’Archestrate in Paris with Alain Senderens – three Michelin stars for 28 years!
The menu offers a “bistronomique” dish with a delicious duo: long-braised Beef cheek and pan-fried Foie Gras with a “jus” of Daube with Porcini Mushrooms and seasonal vegetables. The meat melts in the mouth and the juicy Foie Gras is sublime and the gravy, a perfection! The association is relevant, perfect and delights the taste buds!
Another dish inspired by Provence: the saddle of Lamb Pavé, cocos from Paimpol, Tomatoes, Olives, Lamb jus with Tapenade, topped with the crisp of basil fritters.
The desserts continue the excellence of the meal and you can choose between many grandiose like the big Baba on a Lemon crémeux, Suzette jus, orange supreme flambéed with Grand Marnier, and candied oranges, served in a glass cassolette, or the delicious Raspberry Parfait ice cream, with raspberry chutney or again, the Apricot “façon Melba”, Vanilla crémeux, Apricot coulis, Vanilla ice cream, Almonds.
Woman of change and invention
A woman of change and invention, Brigitte Guignery develops her cuisine du soleil at Le Blanc Manger with his son Cyril and an apprentice. Although very creative, her cuisine is well thought out, balanced, and from the “amuse-gueule” to the Tile served with coffee, one is in the field of excellence, that would be well worth Michelin’s attention.
At the end of the service, Brigitte likes to go and collect her customers’ feedback, from which she draws some of her inspiration, always in search of her clients’ satisfaction. In the dining room, smiling Philippe will propose you fine wine pairings.
Le Blanc Manger offers two menus (entree, main course, dessert) at 37 € or 50 € and prepares a menu with tradition dishes at 27 €.
