At his Restaurant L’Alchimie, chef Loïc Siino tells his Personal Legend of authentic and inventive chef, offering a flavourful sunny postcard in the plate.

Perched on a rocky peak bordered by the Grande Corniche, the village of Eze, the highest in Europe, is a city of Art and Gastronomy which has retained its medieval appearance. Therefore is it natural to find there the Restaurant L’Alchimie. Loïc Siino, a passionate chef, transmutes with the philosopher’s stone of his talent noble local products into the genuine gastronomic gold: the sun in the plate and the satisfaction of his gourmets customers, at affordable price.

A journey of initiation with top chefs

Loïc Siino’s love of plants predestined him to gardening. But the passion for cooking, born with her grandmother, with whom he made small dishes and pastries, drove him to to give up his profession of gardener for culinary studies.
At 20, he began his career in major restaurants in the region, gaining his gastronomic experience with great chefs: Charles Séméria at Royal Riviera in Beaulieu-Sur-Mer, Olivier Striff at Vista Palace in Roquebrune-Cap-Martin and Joël Robuchon at Hotel Métropole in Monaco.

Technique and improvisation after the market

He then worked for four years with Mauro Colagrec at the restaurant Mirazur in Menton. A great complicity with the young Argentinian chef had him share his taste for creativity and improvisation after the products from the market and his pleasure to work vegetables and plants they picked up together in the mountains. At last, he was for one year the deputy of chef Dimitri Droisneau at La Reserve de Beaulieu, from whom he learned the rigor of the technique, such as low temperature cooking. When Dimitri Droisneau founded the Villa Madie in Cassis, Loïc Siino returned to his homeland and opened the Restaurant L’Alchime at the foot of the village of Eze and its steep streets, to tell his Personal Legend of passionate, inventive and authentic chef.

Creative, delicious and colorful cuisine

“My philosophy is the product!” Loïc said and added: “I am here to give pleasure to the client. I’m happy to improvise to please the customers. I am an epicurean, I love to eat and I put myself in the place of the customer…” If a customer has an intolerance to a product, Loïc Siino will brilliantly improvise and replace the ingredient by what he finds in his kitchen.
His creative, savory and colorful cuisine, looks like the composition of a painting, combining the good and the beautiful. The cuisine of Restaurant L’Alchimie is a cheerful and sunny cuisine, made from the freshest local produce, a postcard from the Mediterranean in the plate: fish from a Nice fisherman, saffron and goat cheese from Sospel, trumpet zucchini from Ventimiglia… A special moment for the chef: the gathering of plants growing in his garden or his mother’s, to sublimate his dishes.

A menu that changes according to the market

The “Carte” of Restaurant L’Alchimie is constantly changing with the seasons, the market and the chef’s spontaneous inspiration, with specialties such as Pressé of Crab with Lemon Balm, fricassée of Avocados and Ginger vinaigrette, or Gamberoni Salad, or paccherie Pasta, Gamberoni, Cuttlefish and Langoustine, with Combawa emulsion. A swordfish recently provided by the Nice fisherman enabled Loïc to offer a grilled Swordfish steak with mousseline of violin Zuccini and black Sesame sauce. One can also enjoy a sublime Risoto with Langoustines and saffronfrom Sospel. The dishes are served with sun-drenched vegetables and colorful plants with nice flavors.
For dessert, you can for example enjoy a Panna Cotta with Combawa, Ginger and Crumble with Piedmont Hazelnut or a Strawberry soup with Elderberries and White Chocolate espuma.

The wine list offers wines from all wine regions, but Loïc Siino is currently developing it by adding “discoveries wines” from New Zealand or Argentina, after his travels, as well as Corsican wines and organic or biodynamic wines.

In addition to the “Carte”, the Restaurant L’Alchimie proposes at noon a Menu du Jour at 16, 90 € (Starter – Main course – a drink and a coffee). The evening menu is at 41 €.

After the service, Loïc Siino comes to meet his clients, gathering congratulations and collecting feedback, which is always a pleasure to gourmets.
