Stéphane Léger Hosts Epicuriens Côte d’Azur Monaco

stephane leger restaurant archangeChef Stéphane Léger from the gastronomic restaurant L’Archange hosted the Order of Epicuriens Côte d’Azur-Monaco for his fifth friendly and gastronomic dinner.

Facing the sea, at the first floor of a new building, the gastronomic restaurant L’Archange of starred chef Stéphane Léger is overlooking the old port of Saint Raphael as a flagship of the Var gastronomy. The Order of the Epicureans Côte d’Azur Monaco met on September 28, 2015 for his fifth dinner at Stéphane Léger’s, leading figure of the French gastronomy.

Disciples of Epicurus and lovers of gastronomy

The young Ordre des Épicuriens Côte d’Azur & Monaco was born in July 2014 at the initiative of Philippe Chavaroc, its President, and his friends, all disciples of Epicurus and lovers of gastronomy and art of living. Their philosophy is to discover and to honor the talent of great chefs around gastronomic meals and value wines and products from the French Riviera, Monaco and the Provence Alpes Côte d’Azur.
Once each quarter, a gastronomic meeting per brings together the members at great chef’s venue. The number of guests is generally limited to 60 people to facilitate exchanges between members.

Music cocktail on the terrace

The evening at the restaurant L’Archange, managed by starred chef Stéphane Léger, a founding member of the Order of Epicureans Riviera & Monaco, opened with a musical cocktail on the beautiful restaurant terrace overlooking the city and the old harbor of Saint Raphael.
A sparkling start awaite the guests on the terrace, with the stunning Bollinger vintage Champagne and delicious hot and cold appetizers from the chef’s kitchens. After this moment of conviviality, the guests were invited to attend the very official induction ceremony of new members who came to join the ranks of the association.

Eight new members, including Valérie Rousselle, owner of Château Roubine (cru classé wine) who were presented by Frank Lucet, a founding member who, while respecting the established protocol, has distilled some humor strokes to relax the incumbents. After a presentation of each novice by his godfather, the candidates were inducted by the President Philippe Chavaroc with his sword. The new inductees were accompanied throughout the evening by their elders to help find a  warm and delicious welcome in their new family.

An unforgetable culinary experience

In this beautiful evening, the chef Stéphane Léger had invited a few journalists to his table d’hôtes installed in his kitchen who could live this wonderful culinary experience near the furnaces. The chef with his brigade had made some wonderful surprises with contemporary dishes composed of exceptional products with subtle fragrances from the earth and the delicate flavors from the sea. Always without excess, his cuisine respects with precision the marriage of products, be they from sea or earth.
The master of flavors displayed his talent, his generosity and his culinary expertise to make this evening remain an unforgettable dining experience for the members of the Order of the Epicureans Côte d’Azur Monaco.

A great gastronomic adventure

After accessing the Michelin Guide’s starry firmament at restaurant Le Chassagne in Chassagne-Montrachet in Burgundy, where he earned a star and a golden Gault&Millau, Stephane Leger decided with his wife Vanessa to the meet the challenge proposed by the city of Saint Raphael, between Cannes and Saint Tropez, to open a restaurant on the Vieux Port.
This magnificent establishment that was recently built by the sea, like a gorgeous vessel with futuristic lines, overlooking the old harbor of Saint Raphael, will become the new gastronomic realm of the couple.
Inventive, traditional, with stunning unconventional and creative notes, the Stéphane Léger’s cuisine, which is features seafood, promises nice surprises to the people from Saint Raphael and tourists.

A course towards the stars

A native of Besançon, Stéphane Léger began his career at age 15 with an apprenticeship in Burgundy with chef Jean Crotet, at the restaurant La Côte-d’Or in Nuits Saint-Georges. For many years, he multiplies experiences and integrates brigades of starred restaurants, from the Alpe d’Huez, Les Deux Alpes, via Avignon and the Ile de Ré. The consecration comes in the restaurant Le Chassagne with the first Michelin star in 2009, followed in 2012 by a golden Gault&Millau, supreme award that only crowns 5 chef a year in France.
In February 2015, seven months after the opening of the restaurant L’Archange, Stéphane Léger is awarded with one star in the Michelin Guide.

Le Lamparo and L’Archange, both modern and warm

Besides the gastronomic restaurant L’Archange, the establishment led by Stéphane Léger and his wife Vanessa includes a brasserie for 150 guests on the ground floor, Le Lamparo, where diners enjoy fresh and seasonal cuisine, the flavors of the South, between Provence and Italy at the price of around 35/40 euros.
L’Archange, where Stéphane and Vanessa cultivate the art of hospitality, offers delicious menu with the seasons and a fine, generous, opened and structured gastronomy, meeting a great success.
The Fisherman’s Market below the premices allows them to benefit from the best of local fisheries. A lift is directly serving the brasserie and the gastronomic restaurant as well as the roof terrace. An underground parking provides direct access to the entire establishment.

Sole from Bretagne, viennoise of Morels, jus of fish bone with butter and Vin Jaune, accompanied by a Chassagne Montrachet White “Les Pierres” 2012, Domaine Jean Marc Pillot.
Milles feuilles of Salers Beef with Foie Gras and Porcini, Cubism of spunta and Jus Corsé, accompanied by Diane de Belgrave 2010, 2ème vin de Château Belgrave, 5ème cru classé Haut Médoc.

Yusu Lemon pie revisited, accompanied by a Château Ricaud 2012, Loupiac.
