To clap the end of the 26th Agecotel, trade show on hotel and restaurant sector in the Great South, the day of February 5 delighted the palates with the contest of sweet “Delights of the Mediterranean”.
Trophée National de Cuisine Francis Trocelier
The first competition of the day, the 5th edition of the Trophée National de Cuisine Francis Trocelier, was intended for early risers since it started at 7:30 in the morning. The competition was organized by the Delegation of the Catalan and Occitan countries of Disciples d’Escoffier International, an association for the transmission of cooking knowledge and its modernity. It was intended for professional chefs over 21 years. The competition invited the candidates to achieve in 3 hours an innovative and unprecedented recipe of Gigot de Mer with an accompaniement that should be inspired by Auguste Escoffier’s Culinary Guide.
The jury was composed of Lucien Mongelli and Gérard Oudin. The winner of the 2014 edition was Fabien Pierret from L’Estaque in Marseilles. He was rewarded by a check for 200 euros, a skills training in starred restaurants, a culinary memory and an Escoffier birthday menu.
Disciples Escoffier International is one of the largest culinary associations in the world. It now has over 2,000 members in France and 20,000 in many foreign countries.
Delights of the Mediterranean
In early afternoon, the Delights of the Mediterranean contest took place before a large audience who enjoyed with the eyes the desserts based on Clementine and Chocolate: sorbet, tarts and sweets in the form of gourmet coffee with flavors of the Mediterranean.
The President of the jury was the chef Yves Thuriès, twice Meilleur Ouvrier de France and renowned Chocolatier and Pastry master. Seven renowned pastry chefs competed on the theme Clementine and Chocolate. The contest was open to all professionals of the catering industry (craftsmen, workers, trainers) aged 18.
The winner of the 2014 edition was Ludivine Borrelli from Hotel Negresco in Nice, assisted by Julien Matheret.
At the awards ceremony, they were presented with a check for 1,500 euros, a trip in France offered by Air France, an assortment of chocolate Valrhona, a magnum of Champagne Jacquart…
Next Agecotel tradeshow will be held in 2016.
