The first hotel in St Barth

The ultraluxe villas Rockstar and Nina, located on the beach of Saint Jean, can be joined together to form a luxurious beach ensemble, with recording studio and art gallery. All these homes with white walls topped with red roofs are scattered on the rock and along the beautiful white sand beach. All have magnificent views of the turquoise waters of the Caribbean sea and have direct access to the hotel beach and its lush vegetation.

Haute gastronomie worthy of one Michelin star

For dining, Eden Rock St Barths offers two exceptional places: the Sand Bar on the beach (watermelon with goat cheese, lobster and avocado, salmon sushi) and the restaurant On the Rocks on top of the rock. The menus, signed by the New York chef Jean-Georges Vongerichten, are implemented by Executive Chef Eric Desbordes, who directly came from the 114 Faubourg, one of the tables of the Bristol in Paris. The Sand Bar offers light and relaxed cuisine at lunch. The restaurant On the Rocks, with its haute cuisine worthy of one Michelin star, offers a snapper with fillet of beef, giant prawns and preparations with truffle. Taste Of St Barth Gourmet Festival

The Taste Of St Barth Gourmet Festival took place from 6 to 8 November, 2015. For this second edition of Taste of St Barth Gourmet Festival, French gastronomy has been in the spotlight in the most prestigious establishments of Saint Barthelemy, including the Eden Rock St Barths.
Like the previous edition, the festival invited to its table 7 chefs to bring a little dream about exceptional dinners concocted in duo with the executive chef from the partner establishments. At the Eden Rock, guests could taste the desserts signed by guest pastry chef Laurent Jeannin and the Menu du Chef signed Emmanuel Renaut, godfather of the 2015 edition and its Executive Chef Eric Desbordes.

Vila Joya’s history

It was in 1978 that Dr. Klaus Jung and his wife Claudia travelled to the Algarve in search of a house for their family. Having already chosen a piece of land in the area, they came across a house that was not completely finished and didn’t have electricity or water, but which included a marvelous marble table that caught the eye of the Jung family. With great attention to detail, Claudia Jung transformed the property into a family summer home, which was then opened as Vila Joya in the Easter of 1982.
The story of the restaurant is jointly written by the Jungs and Chef Koschina, because one wouldn’t exist without the other. Now under the ownership of Joy, the daughter of Dr. Jung and the late Claudia Jung, Vila Joya’s award-winning boutique hotel and 2 Michelin-star restaurant continue to enjoy international success.

An awakening to the pleasures of senses

For Relais & Châteaux innkeepers, traveling should be a moment of discovery of the pleasures of Arts of Living and have their hosts taste them through sharing, transmission and preservation of resources. The houses offer a setting conducive to the senses and wellness sensations. The association now has over 70 suggested Routes du Bonheur itineraries in the most inspiring regions. To enjoy a special taste of the land, a concierge team helps customers to customize their Gastronomy and Wine, Art & Culture, Nature and Wide-open Spaces routes, as for the Silk Road.
Relais & Châteaux has just developed a Tea Route that traces the history of tea from its original plantations in China’s Xishuangbanna, and follows its transport by caravan routes on the legendary Tea Route to Tibet and then connects its debut on the island of Sri Lanka to its commercialization in southern India.
The association is also developping several Route des Vins.

Successful Dîners de Chefs Châteaux & Hôtels Collection

Chefs at Château de la Bégude

Goal reached and surpassed for big-hearted chefs of Dîners de Chefs Châteaux & Hôtels Collection: € 110,744 donated to Restaurants du Coeur.

On Thursday, December 3, 2015, nine Dîners de Chefs Châteaux & Hôtels Collection in favor of Restaurants du Coeur occurred simultaneously throughout France with the aim that all revenue of meals and animations during the evening reach € 100,000 to mark Restos du Coeur’s 30 years of struggle, 30 years of solidarity in 2015.

More than 100,000 meals offered

Made by many hands by over 85 Chefs of the chain of etablishments headed by renowned chef Alain Ducasse, the Dîners de Chefs have been a great success, both on the gastronomic field as charitable, as all revenue generated by the talent of big-hearted chefs allowed to donate € 110,744 to the association founded by Coluche.
With this sum, on the basis € 1 = 1 meal, more than 110,000 meals will be distributed by the association as part of its 31th winter campaign.

The sum of € 110,744 has been collected thanks to the 1,200 generous guests who attended the Dîners de Chefs. Each place was proposed to the single price of 90 €, drinks included. The entire revenue generated by the 9 dinners, as well as the activities organized during the evening, was donated to the Restaurants du Coeur.

The following restaurants have hosted Dîners de Chefs: Le Château de la Bégude in Opio (06), L’Espace Monet-Cathédrale in Rouen (76) , Le Domaine de la Corniche in Rolleboise (78), Le Restaurant Michel Chabran in Pont-de-l’Isère (26), Le Palace de Menthon in Menthon-Saint-Bernard (74), L’Espace Darwin in Bordeaux (33), La Cuverie Louis Jadot in Beaune (21) and the Restaurant Maison Sukaldari in Arcangues (64).
At the Restaurant Les Pins Penchés in Toulon (83), of chef Stéphane Lelièvre, founder of the Dîners, the gastronomic evening took place in the presence of Véronique Colucci, widow of the late comedian and Alain Ducasse.

If needed, we will be present!

Alain Ducasse, President of Châteaux & Hôtels Collection said: “Generosity and sharing are central to the cooking profession. Faithful to these values, more than 85 chefs Châteaux & Hôtels Collection have cooked together, voluntarily, to naturally lend their support to 30 years of efforts by the Restaurants du Coeur. As long as the association will need us, we will be present.”

The success of the event, is also due to the restaurant staff who has volunteered and the many partners of the event.

Amuse-Bouche by Chefs Châteaux & Hôtels Collection: roasted Scallop, Mousseline of Pumpkin and Jerusalem Artichoke: a golden and juicy Scallop, eaten with a duo of seasonal vegetables.
Foie Gras, crust of Galabé, frangipane ofCalisson Aix: the crispy structure of Galabé sugar, with its aromatic and long finish beautifully complemented the generous Duck Foie Gras cooked in cloth on its fragrant pedestal of Almond.
The Ombrine in Shrimp Infusion, Artichokes Barigoule, small Ravioli of Ratte Potato and Fennel, Knives and Shellfish Tomato-Lemon condiment: the Ombrine swimming in the its natural environment with islands of succulent ravioli…
Supreme of Poultry, jelly Mandarin, jus corsé with orange and forgotten vegetables: around a low temperature cooked poultry, the marriage of fruit and tuber, of air and root, supported by a juice that gives its full dimension to the dish.
Dessert: Chocolate Finger Elianza, Tonka beans and Citrus Sauce: the combination of strong chocolate and orange is always happy (especially if there are candied orange filament)!
To close the meal with sweet: Mignardises as we like in Provence.
