A former residence to a Swedish Prince

After walking across the medieval village of Eze with its narrow, picturesque paved streets, old stone walls and worked wooden doors, you reach the roof of the French Riviera.
This 400-year old Chateau, a former residence to Wilhem of Sweden, grandfather of the current King Carl XVI Gustaf, is still in its original castle condition, carefully tended in an authentic atmosphere with elegant woodwork and ancient parquet. The one-Michelin-star chef Axel Wagner elaborates traditional French and Mediterranean cuisine that can be savored in the dining room with a sliding roof to enjoy the sun or on one of the many outdoor terraces with the Mediterranean as a permanent show.
Chef Alex Wagner, former Chef Exécutif at famous Georges Blanc‘s restaurant in Vonnas (3 Michelin stars), creates an inventive and creative gastronomy, precise in terms of cooking and flavors, with subtle arrangements of fresh, sunny melodies of local products; a cuisine renewed over the seasons, with attractive, appetizing colors, before the delicate savors be explored by the taste buds.
In the evening, when the sea and the French Riviera sparkle with a thousand lights and turns into in a river of diamonds, sapphires and rubies, the magic of the Chateau Eza restaurant offers the gourmets and epicureans an unforgettable culinary experience, suspended out of time.

Discover the Tasting Menu

At lunch, in addition to the Carte Gourmande, the Chateau Eza Restaurant offers the Menu du Château at 52 € and the Menu du Prince at 62 €.
You can discover the summer Tasting Menu at 120 euros, that chef Axel Wagner and pastry chef Willy Tourette have concocted with a wide variety delicious dishes mainly based on fresh seafood, including: as amuse-bouche: Tartar of fresh Shrimps with Menton Green Lemon mousseline, to be followed by a refreshing Cold Soup with Mint and Cucumber, Parmesan biscuit and Red Pepper sorbet. Taste the savors from the sea with the King Crab, heart of Lettuce and Salmon, in Fleur de Sel with Isigny Cream and Herring Caviar. The land will come to you with the outstanding Baby Spinach with Organic Bacon (cooked for 8 hours), Confit (at low temperature) Egg Yolk and roasted peanuts.

The chef then will offer you a pause with the flavored Watermelon Granité exalted with Fleur de Sel and jelly of Saint Germain, a liqueur of elderflower. We go back at sea with the Lobster Ravioli with Mushrooms fondue in a Shell reduction with Ginger Oil.
As pré-dessert you savor a Strawberry tartar on a Basil biscuit with red fruits coulis.
Brilliant like the final of fireworks, the dessert is a variation around chocolate including black chocolate ganache with salted butter, espuma of white chocolate and white chocolate ice cream on a chocolate.
To accompany the delicious meal: Var wines (White and Rosé) from Château Coussin, Malherbe Blanc, from Burgundy with Beaume du Chateau Chardonnet white and with the dessert, L’Or Delmas, a Muscat de Rivesaltes from Mas Delmas.

The medieval Village of Eze

On a spur dominating the sea and land to prevent invasions, the highest village in europe, perched 427 m high in the Mediterranean sky, was built during the 8th century. Protected by a fortress located at its top, the houses cling to this narrow rocky hill. It’s by foot we venture into this fascinating “eagle’s nest”, through narrow, picturesque and paved streets, where artists or artisans are displaying their works of art of craftsmanship in cave-like small boutiques.
