Les Étoiles de Mougins 2017, the International Festival of Gastronomy, enhances the restaurant pastry with the delicious Concours du Jeune Chef Pâtissier.
The twelfth edition of Les Étoiles de Mougins had as guest of honor chef Daniel Boulud, manager of 14 gastronomic establishments in the USA, including Daniel** and Café Boulud* in New York. For the past four years, the Concours du Jeune Chef Pâtissier (Young Pastry Chef Contest) has been honoring the restaurant pastry, a highlight of the International Gastronomy Festival, under the presidency of Gianluca Fosto.
Mixing the flavors from the world
For the fourth edition of the Concours du Jeune Chef Pâtissier – Les Étoiles de Mougins 2017, four finalists were selected from written recipes by a jury composed of professionals. During their preselections, the candidates – chefs or professional pastry chefs under 35 years of age – had to propose a restaurant dessert recipe à l’assiette on the theme: blending the flavors from the world. The recipe had to include seasonal fruit and a chocolate note without that note being predominant. The four candidates qualified for the final reproduced this recipe on June 24 in 3 hours. They then had a minute to present their masterpiece to the jury.
A jury of prestigious pastry chefs
The aesthetic creations by the young pastry chefs were appreciated and noted by a jury of famous pâtissiers, under the presidency of Gianluca Fosto, Fosto Consulting of Milan, Italy, elected Best Pastry Chef of the Year in 2016 at the International Congress Identità Golose, along Honorary President Christophe Renou, MOF, Geneva, Switzerland. The jury was composed of Frank Fresson, Pâtissier-Chocolatier, MOF, Pâtisserie Fresson, Jarny in Metz; Franck Michel, MOF, Pastry Chef consultant and trainer, 2006 World Pastry Champion; Yann Brys, MOF, Pâtisserie Tourbillon in Paris; Ghaya Oliveira, Chef Daniel Boulud’s Pastry Chef, Restaurant Daniel in New York and Etienne Leroy, 2017 Patisserie World Champion, Hotel du Cap Eden-Roc in Antibes. Technical Jury: Jean-François Barbéris, Tiara Miramar Beach Hotel & Spa Côte d’Azur and Hotel Tiara Yaktsa Côte d’Azur in Théoule-sur-Mer.
Concours du Jeune Chef Pâtissier winner list
Pierre-Jean Quinonero, Le Baron, Château de Ferrières in Ferrières-en-Brie, won the Concours du Jeune Chef Pâtissier, ahead of Morgane Raimbaud, L’Abeille, Shangri-La in Paris, Julien Noray, AG Les Halles in Paris and Morgan Costa, Taillevent in Paris.
The winners left with many gifts offered by the generous partners of Étoiles de Mougins.
