The Rencontres de l’Excellence celebrated 40 years of Guide Gault&Millau and ‘Elle et Vire Professionnel at Hotel du Castelet at four-Toques chef Christophe Bacquié.

The Rencontres de l’Excellence, created and organized by Elle & Vire Professionel and the Gault&Millau gastronomic guide, is a unique opportunity to highlight the extremely strong bond between chefs, pastry chefs and producers. Indeed, excellent products are essential for cooks: no Haute Cuisine without the Chefs’ creative talent, but no Haute Cuisine either, without quality ingredients. Together, chefs and producers cultivate a demand for quality, a passion for excellence, authenticity and creativity.

A village of producers of excellence

The fourth stage of Rencontre de l’Excellence on September 14, 2015, at Christophe Bacquié‘s at the 5-star Hotel du Castellet, followed that in Aquitaine, Nord Pas de Calais and Rhône-Alpes. Many chefs from the region Provence-Alpes-Côte d’Azur came to present their producers to share their love of good products, promote their expertise and passion for gastronomy.
On this occasion, a village of producers was installed in the Hôtel du Castellet to have a whole corporation related to gastronomy taste their delicious oysters, their regional cheeses, fruits and vegetables, all accompanied by delicious local wines.
During a cooking demonstration, chef Philippe Da Silva from L’Hostellerie des Gorges de Pennafort concocted a delicious recipe with truffles. Having feasted on the delicious products of the Mediterranean soil, the guests convened to a sumptuous lunch by chef Christophe Bacquié, four Gault&Millau Toques and Meilleur Ouvrier de France.

The Mediterranean terroir highly honored

Products, cooks, kitchens, all that is found in the beautiful and lush area of our beloved Mediterranean. Firstly, the sea and its many varieties of fish for the delight of fans of bouillabaisse, bourride and fish soup, then the vegetables and fruits, which, thanks to a climate blessed by the gods, bloom and ripen throughout year to flourish on our plates in a multitude of vibrant colors.
How not to be seduced in early spring by the scent of the Lemon from Menton, in late summer, by the tasty fig from Sollies or the odorous truffles from Vaucluse. All these beautiful products of the sun, grown with love by the best producers in the region, glorified by famous starred chefs like Vergé or Passedat, are a perpetual source of culinary creation, whether Niçoise or Provençal.

On the edge of a forest of pine trees, overlooking the Mediterranean, the 5-star Hotel du Castellet is the prominent address in the Var. The Hotel du Castelet is also one of the best Southern gastronomic table, nestled in lush cozy and relaxing setting, in the heart of the Hotel, managed by the talented chef Christophe Bacquié, crowned four Toques by Gault&Millau. Passionate about gastronomy, the chef has imposed his style in the prestigious gastronomic Restaurant Christophe Bacquié, launched in March 2015.
His Mediterranean cuisine is based on seasonal products and seafood, with a nod to the flavors from elsewhere that give an unsurpassed savor to the recipes he lovingly elaborates. He likes to welcome guests in his restaurant opening on a beautiful terrace with stunning views of the Provençal countryside and its majestic pines.
With his second Guillaume Royer, Meilleur Ouvrier de France in 2015, with whom he collaborated for 7 years, and his pastry chef Loïc Colliau, the chef likes to create new dishes, but also train young apprentices to enlarge the family of gastronomy.
