La Pinède Plage hotel, located directly on the Gigaro beach, anchors its fine sandy beach in the curve of a majestic bay opening onto the islands of Levant. The 33 large and airy rooms all have a balcony or a terrace with a magnificent view of the deep blue sea and the peninsula of Saint-Tropez. New Chef Akhara Chay
Akhara Chay is the new chef who signs the menus of the two establishments, the elegant gastronomic restaurant La Palmeraie at Chateau de Valmer and the chic restaurant La Pinède, with feet dipped in water.
Akhara Chay’s professional profile was shaped with great names of the cuisine, such as Ghislaine Arabian at Pavilion Ledoyen, Alain Ducasse at 59 Poincaré, Eric Provost, his mentor, at the Royal in Deauville, Paul Bocuse at Ecole des Chefs in Écully and Serge Gouloumès at Mas Candille in Mougins.
This dazzling journey now allows Akhara Chay to impose a cuisine with a beautiful identity. Respect for the product and mastery of cooking are essential for him. The originality, balance of flavors, subtle intelligence of dishes and color magnifies his kitchen. His masterpiece is undoubtedly the “Oeuf de Poule dans l’idée d’une ile flottante” (Hen egg in the idea of a floating island), golden mouillette Saint Jacques and caviar Sturia prestige of France, creamy tangy with lemon from the garden, that put into happiness the tastebuds of the clientele of Chateau de Valmer. The diner may begin with Green asparagus served warm with croustade of old Parmesan, Bacon from Colonnata “en transparence”, chicken jus corsé with OlivesTaggliasches. It can continue with the bluefin tuna with tandoori spices, cooked “rosé”, casserole of peas and fava beans with candied tomatoes and onion compote. To end the delicious meal, after the cheese, you may choose one of the delicacies, like the organic Chocolate Barry “Alto el Sol” on a mellow texture or the spherical Crème brûlée with red fruit of the moment.
La Pinède Plage proposes a Salad & Grill Chic at lunch and in the evening, the idyllic restaurant opens on a bistronomic menu with an Oyster Bar by David Hervé, a novelty in 2014. In a soft musical atmosphere, with its large teak terrace and soft lighting, feet in the water, facing the Golden Islands, difficult to find a better place to enjoy such an enchanting cuisine.
In both restaurants, guests can enjoy the new vintage Rosé 2013 from the 3-hectar vineyard of the estate, certified organic.
Meanwhile, near the pool, in the lawns at the foot of Chateau de Valmer, the creation of a new local Wine and Pastis Bar allows you to relax in the middle of nature to the sound of cicadas.
The Spa by L’Occitane
The neat and refined services come in beautiful colors of Provence at Chateau de Valmer hotel and La Pinède Plage, both connected by an avenue of majestic old palm trees allowing customers of both institutions to share as they wish the benefits offered by the two institutions.
This year, always anxious to improve the quality of Spa service, a partnership was established with the famous brand L’Occitane en Provence, a brand of natural cosmetics, using the principles of aromatherapy and phytotherapy. The 500 sqm Spa, with swimming pool, jacuzzi, gym, opening to the outside, offers a journey of the senses and experts facials, wet and hair care, specific treatments (scrubs, wraps, slimming treatments… ), body massage by exclusive protocols.
Both establshments belong since 1949 to the Rocchietta family which has kept over time this beautiful atmosphere of charm and serenity, but also has it evolve over the years to make today these beautiful luxury hotels.
Today’s generation has entered the Chateau de Valmer and La Pinède Plage in an eco-responsible approach (European Eco-label), both in the production of its fruits, vegetables, herbs, edible and medicinal plants used in the restaurants as well as in its AOC Côtes de Provence rosé wine production.
