The Chefs au Sommet d’Auron hosted at the Le Forest restaurant in Saint Dalmas Le Selvage the chefs David and Noëlle Faure, Laurence Dupertuy and Claire Verneil for a delicious eight-hand gastronomic meal with authentic accents from the Alpine terroir.
Chefs au Sommet d’Auron opened up on a first gastronomic dinner orchestrated with eight hands with the noble ingredients from the Mercantour, produced with the love of the terroir by passionate small producers. David and Noëlle Faure (SensÔriel in Nice), Laurence Dupertuy (Notes de Cuisine in La Colle Sur Loup) and Claire Verneil (By Claire Verneil in Biot) made an elegant and refined menu, composing a festival of flavors that delighted thirty or so gourmets at Le Forest restaurant in Saint Dalmas Le Selvage, a charming mountain village in the heart of the Mercantour.
Locavore in the spotlight
The charismatic chefs David and Noëlle Faure have made the choice since years to highlight a selection of the best producers of noble products from our rich Riviera terroir. Their sunny cuisine from Nissa La Bella made the trip to the Auron ski resort to treat the tourists who came in droves to one of the most beautiful gastronomic events of the year: Les Chefs au Sommet d’Auron.
For this great opportunity, David and Noëlle – two exceptional chefs who give pride of place to the Locavore – had brought in their luggage two members of the association Les Toques Brûlées, of which they themselves are part, Laurence Dupertuy (Notes de Cuisine à La Colle Sur Loup) and Claire Verneil, (By Claire Verneil in Biot).
A quartet of talented chefs
From January 20 to 26, 2018, the Chefs au Sommet d’Auron offer memorable gastronomic experiences at a unique and privileged price. Every evening, the renowned chefs officiate in the restaurants of the resort and Haute Tinée and offer sumptuous four-course gastronomic dinners at the price of 45 Euros per person to the tourists and inhabitants of the region.
Le Forest, a partner restaurant of the event with intimate, wooded and warm décor, hosted in its kitchens on Saturday, January 20, 2018 the first gastronomic dinner, hosted by a quartet of chefs with talented toques, with as guest of prestige Stéphan Perrotte, Best Confiturier in France 2014, 2015 Jam World Champion and Gold Medal at the Concours Agricole de Paris.
Authentic culinary delights
Amuse-bouche by Noëlle & David Faure: Organic Egg with a just cooking, puffed Pig Rind (Products from La Ferme La Lavancia of Agnès and Renaud Papone) in Puget-Théniers, accompanied by Petit Épeautre from Florence Bonnard in Sallagriffon as a Risotto.
Les Prémices by Laurence Duperthuy: Blettes d’Agnès and Renaud Papone and Dominique Girod‘s Brousse à Besseuge with Ravioli, Alpage Sage Butter, Smoked Bacon Crumble.
A Mountain Tour with Noëlle & David Faure: Dominique Girod‘s Ewe Meat cooked as a revisited Blanquette, Confit Squash, Chou Kale and Spinach Pistou (Vegetables of the Papones), accompanied by the Snails of Véronique Thirion in Villars en Persillade on a Tartine served apart.
Gourmandise by Claire Verneil: The combination of chocolate and chestnut in freshness of Citrus from the country, yoghurt and cream of raw milk from the Farm of Gastres in Braux in “acidulé”.

For seven years, the Festival de la Gastronomie de Montagne Les Chefs au Sommet has been bringing together many talented chefs and pastry chefs from the French Riviera who share with the gastronomes skiers an authentic moment of culinary pleasure and conviviality, in the heart of the sumptuous Mercantour mountains.
