The «Cannoise» Cuisine in a book.
In Mediterranean Provence, as everywhere in France, each city is the expression of a terroir with its more or less known culinary delights. Marseille has the Bouillabaisse, Nice, its salad, Antibes, its tomato… Cannes has its culinary traditions and Cannes cooking has an identity: the recipes our grandmothers, adopted and reinterpreted over the years, by the chefs from Cannes. It is a cuisine of the sun that can be enjoyed also with the eyes and nose. For the first Cannes cookbook, Jean-Marc Geffrier, private chef, born in Cannes, has collected traditional recipes from his family and several generations of "Cannois", recipes from the terroir. Throughout this book, guided by his memories, he constituted a legacy: the taste of Cannes. Over thirty chefs from Cannes were able to bring to the peak of cooking classicism the Cannes traditional recipes. And because no good food remains frozen, as true artists, they were able to have the tastes, ingredients, colors and scents evolve in a permanent quest of subtle innovations. Between Provencal pie and Neapolitan pizza, they have the art of remaining "Cannois". Patrick Flet, gastronomy journalist from Cannes, has selected their more typical dishes.
