Chefs au Sommet d’Auron 2023 thanked the generous partners of the Mountain Gastronomy Festival in the snows of Mercantour during a festive reception at La Brasserie.

Chefs au Sommet d’Auron 2023 : the Mountain Gastronomy Festival celebrates high gastronomy from 14 to 19 January 2023 with summits of taste, mountains of flavour, and peaks of gustatory emotion in the heart of the emblematic Mercantour ski resort. Talented chefs and pastry chefs from the Côte d’Azur share moments of authenticity and gastronomic pleasures with tourists and inhabitants of the Haute Tinée. As every year for the past eleven years, loyal and generous partners contribute to the success of the Festival and a reception at La Brasserie in Auron paid tribute to them on Monday 16th January 2023.

Sharing culinary delights

With the sumptuous peaks of the Mercantour as a backdrop, the Chefs au Sommet d’Auron have been celebrating Haute Gastronomy for eleven years through events that share culinary delights. Patrick Raingeard, talented chef of the Table de Patrick Raingeard, restaurant of the prestigious and unique Cap Estel in Eze, honoured the eleventh edition of the gastronomic event with his sponsorship, his smile and his kindness.

Culinary prowess

Le Festival de Gastronomie de Montagne propose une semaine de démonstrations culinaires, d’ateliers ludiques et de 5 à 7 The Mountain Gastronomy Festival offers a week of culinary demonstrations, workshops and gourmet happy hours at the Salle Rovery. During the Festival, renowned chefs perform culinary feats each evening by concocting gourmet dinners in the resort’s restaurants.

Gourmets are spoiled every evening

Every evening, the restaurants in the resort of Auron, Saint Dalmas le Selvage and Saint Etienne de Tinée welcome into their kitchens renowned chefs and pastry chefs from the region who prepare sumptuous gastronomic dinners at the unique and privileged price of 55 euros per person. These exceptional dinners are enjoyed by the fire in the relaxed and warm atmosphere of the wood-panelled dining rooms of the mountain restaurants. These high altitude dinners and the festival events are organised in partnership with prestigious partners from the wine and culinary world.

Convivial interlude

Numerous chefs and actors from the Mountain Gastronomy Festival gathered around the partners of the Chefs au Sommet d’Auron 2023 for a presentation of their know-how and a tasting of their products in the warm and wooded setting of La Brasserie de l’Endroit on Auron central square.

Délicious nectars

Guests were able to discover and appreciate the nectars from Château Margüi, the Var jewel of George Lucas‘ Skywalkers Wineyards, as well as the White cuvée Figure Libre from Domaine Gayda in the Aude Pays d’Oc, presented by Champagnes Philipponnat… Guests also discovered the nectar from Domaine de Barbossi in Mandelieu, the Estérel volcanic cuvée. The Hippolito family, owners of the premises, offered a taste of the Rosé from their Domaine Fauveris in Lorgues.

Olive oil, liqueurs, Irish coffe and cocoa

Victor Delpierre, World Barista/Cocktail Champion, presented liqueurs – like the tasty Chartreuse – and Andros fruit juices from which he concocted delicious cocktails – including his creation, the Riounet, the official drink of the resort, before distilling an exceptional Irish Coffe. Karim Djekhar came from Menton to present the perfumed oils of his Huilerie Saint Michel which have already seduced many chefs to sublimate their gastronomic creations. In the professional cocoa section, we discovered the Mayan Red chocolates from Xoco Gourmet as well as those from Cacao De Colombie.

Loyal and committed partners

Colette Fabron, the Mayor of Saint Etienne de Tinée – Auron, asked Michel Guillot, President of the Tinée Tourist Offices and organiser of the Chefs au Sommet d’Auron to represent her. Michel Guillot thanked all the chefs and partners who make this festival possible through their friendship and talent, and contribute, year after year, to its success. His thanks also went to the director of the resort, Frédéric Gilles, to the participating restaurants, sports shops and other establishments that provide valuable assistance to the Festival. Michel asked for a round of applause for Noëlle and David Faure for the success of the Toques Brûlées giant barbecue which delights skiers every year.

Patrick Raingeard, godfather of the eleventh edition

Michel Guillot warmly thanked the godfather of the eleventh edition, Patrick Raingeard, starred chef of the Table de Patrick Raingeard at the magnificent hotel Le Cap Estel, a unique place in the world on the Eze seafront. Patrick has done a lot of work for the event, notably by coaching the students of the Lycée Jeanne et Paul Augier in Nice, who prepared the gala dinner at the opening. He also honoured the Toques Brûlées barbecue with his presence, encouraging them with his kindness and participating in the communion with the skiing public.

La Brasserie de L’Endroit

Located in the centre of the village, just opposite the cable car, the bar-restaurant La Brasserie of the Edelweiss d’Auron hotel was taken over in January 2023 by the Hippolito family, who already owns Le Blanchon on the Auron slopes. The establishment seduces by its comfortable setting and its protected and sunny terrace which is the ideal place to have a drink or share a meal in a warm and family atmosphere.

Tasty and varied brasserie cuisine

The restaurant offers tasty and varied brasserie cuisine, based on Provençal and mountain culinary traditions and based on fresh seasonal produce. Depending on the time of day (or even the season), the Brasserie de l’Endroit has several facets. In the afternoon, you can enjoy a hot chocolate (or ice cream) in a quiet, family atmosphere at snack time before continuing with an aperitif. Then, from 7pm onwards, you can sit down at the table and discover tasty stewed recipes, excellent meat dishes, large and beautiful mixed salads, pasta with all kinds of sauces… All cooked with love.

Snow stars

The Mountain Gastronomy Festival was born from the initiative of members of the Auron and Saint Étienne de Tinée Traders’ Association who, having established friendships with many starred chefs in the region, created the festival in February 2012 under the aegis of Michel Guillot, President of the Tinée Tourist Offices and Krystel Biret, her deputy. Many chefs and partners have rallied to the cause of this gastronomic event which has become a must. Les Chefs au Sommet d’Auron is organised by the Association des Commerçants et Artisans d’Auron et Saint Étienne de Tinée with the support of the commune of Saint Étienne de Tinée, the Office de Tourisme, the SEM des Cimes du Mercantour and the Chambre des Métiers des Alpes-Maritimes and the Artisans Arts et Délices.
